I am just about Bill Gates'd out.

Am trying to change the exchange server login name and password on my 700WX but AS has those two fields greyed out. Can't find a version # for AS but it is the one that came with the phone in WM5

Can't find anything searching here or on the web at large.

Has anyone ever done this?

You will have to delete the current setup in ActiveSync and then set up a new one using the new name.
