Windows Mobile Professional devices are not the most user friendly. If you want to get her into a more advanced phone than what she has so that you can customize it for her, I recommend the Motorola Q9c or even picking up a first generation Q really cheap on ebay. It is just as customizable as Windows Mobile Professional, but it's more user friendly.

Another good option for your girlfriend is the Treo Centro. It's easy to use. No mobile platform is more customizable, and it's got a really compact form factor with a keyboard that is pretty comfortable for a woman's slim fingers or long finger nails.
