I can't comment on the 6800, but I bought an i760 and was given a 6900 so I can offer some comparison. I love them both, for different reasons.
The i760 is a lot of phone for the money. It comes with MS Voice Command, which the 6900 does not (it has voice tags, which suck), WiFi, slide out keyboard, two batteries (which you will need, because the battery life on both the i760 and 6900 are pretty bad). However, it is much heavier then the 6900, particularly with the extended life battery. I thought that I would not want to go back to only having an on-screen keyboard, but the i760 keyboard would miss a lot of key presses, so my accuracy is about the same on either one.
6900 has twice the memory, and supports high capacity (up to 8 gig) micros SD cards. i760 only supports a 2 Gig card, although there is a hack available to give it high capacity.
6900 comes with the cool HTC software add-ons, but again, they are available from various sources for installation on the i760.
If you are not afraid of hacking, there are custom ROMS available that give the 6900 WM6.1, Rev A and on-board GPS, it is possible that Verizon my produce an official ROM for these functions at some point. This is very unlikely to occur for the i760.
Reception on both is about the same, but I think the voice quality on the i760 is better, and it is a better speakerphone.
Bluetooth performance seems about the same to me. Both support stereo bluetooth.
The 2 Megapixel camera on the 6900 takes nicer out-door pics then the 1.3 on the i760, but it is really bad under low light and only the i760 has a flash. Neither of them are really good cameras, but either are OK for the occasional snapshot.
6900 uses standard mini-USB connection for power and data connection. i760 is a proprietary cable, and the USB cable that comes with it will not charge the phone (although there is a 3rd party one available from pocketsolutions.com that does charge it). However, the 6900 needs an adapter to use a wired headset (comes with it, but one more thing you need to carry), the i760 has a standard headset jack.
On balance, I am using the 6900 as my every-day phone, but I am not going to sell or give away my i760 because I think I may use it as an alternate when I am traveling (certainly keeping it as a spare at least).
I hope this provided some help, the good news is that this is a tough choice. Just a couple of years ago, there were no choices at all, not there are so many it is hard to decide.
