Is there anyway to create a voice dial command to redial a number. It would be a great idea if I could use this for when I am in my car using the ear phone to be able to say "redial" and it would redial the last number.

No, but this is easy to do with one hand. Hit the green phone button several times. The first time enters phone mode (if it isn't there already), the second time starts the voice recognizer, the third time redials the last number.
