Be wary of 1800mobiles.com's descriptions on their web site. I ordered stuff from there and it was wrong and it was a hassle to return to them. They were also selling the old crummy version of the 6035 leather pouch when Kyocera had a new and improved one out.
Has anyone tried using the single earphone hands free headset for listening to music?
Also, with the two-bud headset, is there a way to clip the unused earbud while on the phone?

Yes, you can listen to music with a single earphone headset, but it doesn't sound good at all. and the stereo headset comes with one clip--you could use that to anchor the second earbud if you wished.

I bought the Kyo headset and it works fine for MP3 and phone calls. I especially like the push-button switch on the mike. With the headset plugged in and the phone closed, you hit the button and voice-dial. When I get a call, the voice lady says "incoming call, answer it" and I say "yes" and I'm on the call. Sweet!
Is there any way to get the stereo channels merged into a single mono stream when listening to MP3's with the single earbud headset that is normally used for phone calls? The stereo channels seem to be merged when listening to MP3's on the builtin speaker.

I just asked a very similar question in the Jabra BT headset thread. I sent a PM to coolcat, the person who is making the custom-Kyocera-to-standard-stereo adaptors. Keep an eye out for a reply there, or I will update as I hear.
