How can I create a voice-memo without using the stylus?

If you allocate a button to the Memos application (via PDA Prefs then select the Buttons menu), you can create a voice memo by holding that button down for about 2-3 seconds. The system automatically assumes that you are making a voice memo, and prompt you to begin recording.
