Many have asked what the solution is to one-touch voice memos like the 6035 had. Well here is the answer.
Since Palm hard keys (address book, date book, to-do's, memos) can be reassigned in the Palm preferences application under the "Button" category, just assign one of your buttons to the "Memo" application. Holding down this button will then force the handset into a new voice memo.
