MMS comes over the data connection, but is billed separately. If you disable the data communication, I don't believe you're ever going to see MMS/SMS messages.
If you're just trying to avoid the data plan firing up for e-mail, adjust the timing for checking messages to "manual" instead. Do the same for any apps that could automatically grab the data connection (like a weather app) to turn off their automatic access. Then you should avoid the problem you're having.
