I'm relatively new to the PDA world, and I have read more than a few posts talking about cooked roms. What are cooked roms and what are the pros/cons of having a cooked rom and where would I be able to get one should I decide to "upgrade"?

A cooked rom is a custom rom that contains programs and settings that have been optimized. Also refered to as hacked roms because it usually requires some type of hacking to be able to load the custom rom onto the device. In my experience, cooked roms offer a better overall device experience.
