Backup and Restore on to another unit

Hello

My girlfriends HTC Touch display broke. I would like to do a FULL BACKUP of her current device (which is still useable, the display & backlight have issues) and then dump the whole thing on the the replacement unit.

Which software can do this for me? I will buy which every one can do the job!
