I know there is software out there, but I can't find it again. I keep making calls by accident during calls. Somebody created software so the screen goes off immediately and then it comes back on when you turn the phone or something. I searched over XDA, but I can't find it. Thanks.

Advanced Config has it in one of it's many tweek settings:

I'm going to check both of them out and see which one works best.

The touch incall screen tweak works exactly as it is intended...put the phone up to your ear and the screen turns off take it away from your ear and the screen turns on. So simple yet so helpful.

Scrosler's Kitchen has an option for a in-call "curtain" that you can move down to access the on screen buttons, or back up to block them. It works GREAT!! I cant live without it. Check out sskusers.com
