Why is there no option for Text Message?
When I go to Messaging the only two options I have are:

1 SMS/MMS
2 Setup E-Mail

The electronic manual shows I should have 4 options including Text Message.

Anyone else see this issue? How can I send a text without the option?

SMS is text messaging and is now combined with the MMS option. You pick that and from there you can choose either to send a textn pic, video, etc...

The other option in the manual is Outlook Email. You only get this if you have synced your phone to Outlook.
