The functionality you are talking about is really no different between the MDA and the Wing. Whatever you are doing with the MDA you can do with the Wing. MMS is totally unrelated to data plans -- sending photos using your Wing is really part of your phone plan. I beleive that multimedia messaging works with any TMobile phone but your plan will determine whether there is a charge. The type of phone has no bearing upon whether or not you will be charged. So I would say that if your goal is to take your SIM card and move it from the MDA to the Wing, then there should be no change in how MMS messages are charged to you.
As for email, you cannot use GPRS without being charged for it. So with the MDA and the Wing, if you want to get email then you are going to have to use the WiFi capabilities of both devices, not GPRS. GPRS is the data plan and without it, you cannot use the Internet or receive email. I am not that familiar with tzones because with the MDA/Wing there is really no need for it because of WiFi support (and GPRS if you pay for that).
