I have vista and was able to hotsync my 700p to palm desktop. It was a pain, but I used the Update you can download from Palm.

As far as migrasting to the Centro. I used my computer to copy my SD card to my desktop and then copied it to the MicroSD card (Via the microsd adapter that came with the card.) Then I just used Backup Buddy to restore all my stuff to the Centro via microSD.

Then when I had a little more time I hotsync'd my centro to palm desktop (centro overwrites desktop). I was able to use my old hotsync cradle (an 680 cradle that works with 700p and Centro)

I do hate that I can't sync outlook anymore.
