I have not found a setting in the stock email client or connection settings that will disconnect after a set time or after you receive email. So the only alternative I've found is in third party products like PhoneAlarm that Ocyberbum mentioned. You probably haven't got a lot of response because there really isn't a lot of options for this. It seems that a lot of the features of WinMo phones assume you will have an "always on" internet connection, and I guess an unlimited plan...
