Jeremy, when you replace the icon, it should also replace the icon in the Sync Center. It might not show up right away, but it does show up. If not, you can always try replacing the ICON file in the ActiveSync profile directory:
c:\users\(your username)\AppData\Roaming\Microsoft\ActiveSync\Profiles\(your profile key)\
Just remove the device from the cradle, and then go to that directory, and replace the sync.ico file with the one for your device, and then reboot. It should then change the "rest" of the "old" default images with the one of your device.
Here is my Sync Center (and to tell you the truth, I don't remember if I replace the Sync.ico file in that directory or not, but it's worth a try).
