No, you cannot do a restore using SPB Backup, because you will loose important registry settings that were undoubtedly added during the upgrade process.

I believe the new version of Sprite Backup 5.1, you can enable an upgrade ROM feature that takes a snap shot of your ROM before and after and reconciles them so you can perform a post ROM upgrade restore.
