OK you guys won't believe how easy this is. Maybe this tip has been posted but I haven't seen it yet.

If you want to totally disconnect from a data session (either 1X or EVDO), simply push and hold the END button. I think you have to hold it for maybe 2 seconds or so. You can watch your connection drop and let go after it does. It does not shut the phone down, it will just disconnect the data.
